Daily maintenance — gets done every day, every shift. No exceptions.
Open of business
- [ ] Walk-in cooler temp logged
- [ ] Walk-in freezer temp logged
- [ ] All reach-in temps logged
- [ ] HVAC running at correct setting (cooling in summer, heat in winter)
- [ ] No water on floor anywhere (catch leaks early)
During service
- [ ] Hand wash sinks restocked as needed
- [ ] Sanitizer buckets refreshed every 2 hours minimum
- [ ] Trash emptied before overflowing
- [ ] Drain mats clean
Close of business
- [ ] All equipment powered down correctly
- [ ] Walk-in doors tight, temps logged again
- [ ] Hood vents off (kitchen)
- [ ] All sinks scrubbed
- [ ] All drains poured
- [ ] Floors mopped
- [ ] Trash + recycling out, compost separated
Spot fixes
- [ ] Any wobbly chair → tag with note, pull from floor
- [ ] Any flickering bulb → log for replacement
- [ ] Any sticky door → log for hinge service
- [ ] Any plumbing leak → STOP, escalate to MOD immediately
Log
All issues spotted during the day get written on the maintenance log in the daily ops binder. MOD reviews at close.
