The kitchen dishwasher is a low-temp chemical sanitizing machine (not hot-water like the glasswasher). This means sanitizer concentration matters and gets tested.
The injector pulls QSan into the final rinse cycle. Concentration target: 150-400 ppm quaternary ammonia.
Test at the start of every shift AND when EcoLab tech visits.

If below 150 ppm: STOP using the dishwasher, hand-wash in 3-comp sink, call EcoLab same day.
This machine relies on chemical sanitization, not heat. Sanitizer concentration logs are part of our food safety log. If a DOH inspector asks, you point at the log + the test strips on the wall.
