The kitchen dishwasher is a low-temp chemical sanitizing machine (not hot-water like the glasswasher). This means sanitizer concentration matters and gets tested.
Chemicals
- Dish Solid (detergent block) — front-left reservoir
- Dish Rinse (rinse aid) — front-right reservoir
- QSan sanitizer concentrate — under-sink injector line
The injector pulls QSan into the final rinse cycle. Concentration target: 150-400 ppm quaternary ammonia.
Daily check (open)
- [ ] All three chemical lines feeding properly (visual: line not kinked or empty)
- [ ] Filter basket empty and clean
- [ ] Wash arms spinning freely
Daily check (close)
- [ ] Empty filter basket
- [ ] Run cleaning cycle empty
- [ ] Wipe interior
- [ ] Crack door to dry
Testing sanitizer concentration
Test at the start of every shift AND when EcoLab tech visits.
See titration testing for procedure.
Target reading: 150-400 ppm.
If below 150 ppm: STOP using the dishwasher, hand-wash in 3-comp sink, call EcoLab same day.
Weekly
- [ ] Descale (Monday, before service)
- [ ] Test the rinse temperature — should hit 120°F minimum
- [ ] Inspect chemical injector tubes for cracks or kinks
DOH note
This machine relies on chemical sanitization, not heat. Sanitizer concentration logs are part of our food safety log. If a DOH inspector asks, you point at the log + the test strips on the wall.
