Goal: The trainee leaves Day 1 understanding what Lancey IS and what it isn't. No service touches. Observation only.
The MOD owns Day 1. Bring the trainee in 30 minutes before family meal. Complete the first-day checklist: paperwork (W-2, I-9, direct deposit), uniform issued, locker assigned, tour of the building (FOH, BOH, walk-ins, restrooms, exits, coat closet, host stand, bar well, the Pill freezer).
The trainee SHADOWS the MOD for the entire shift. Eats family meal with the team. Attends pre-shift. Watches the room fill. Watches first-beverages happen. Watches a soigné-marked guest get greeted. Watches a comp get issued (if one happens). Watches close.
The trainee does not touch: tickets, tables, the well, food. Hands stay at sides except when eating or note-taking.
The trainee carries: a notebook. Writes down questions as they come up.
10-minute debrief with MOD. What did the trainee see that surprised them? What confused them? What's their first question?
Coach sign-off: Trainee asked at least 3 questions during shift. Trainee observed without interfering. Trainee can articulate, in their own words, what Lancey IS (and what it isn't).
