Goal: Pass the handbook test. Pass the MOD review. Released to full station, full tip share.

Pre-shift

Trainee takes the 50-question handbook test in the back office. 60 minutes. See the test outline. 80%+ to pass. If failed, 7-day study window and retake at Day 21.

Read before shift

Final review (don't open new reading at this point — re-read whatever was confusing):

During shift

Trainee runs section solo. Coach is off the trainee's table now (assigned elsewhere). MOD watches from the bar.

What the MOD watches for

  • All "must-pass" items per training-pass-fail-standards:
    • Greeting + first beverage standard (≤2 min)
    • Reads the soigné mark before approaching a VIP
    • Confirms allergies verbally every time
    • Cocktail spec recall (5 random menu drinks, full spec)
    • Comp authority understanding
  • All "discretionary" items as well — pace, language, anticipation, recovery

End of shift — Day 14 MOD review

Run the Day 14 MOD review conversation.

Outcomes:

  • Pass: Released to full station, full tip share, no more coach shadow. Next check-in: 30-day check-in.
  • Pass-with-watch: Released to full station + coach checks in at 30-day mark.
  • Fail: 7-day re-training cycle, retest at Day 21. If fails Day 21, role-fit conversation.

What's next

If the trainee is bar staff and passed: Week 3 begins tomorrow.

If the trainee is FOH (server/host) and passed: full station, partial coach contact in the first week, then standard schedule.
