When we use them
- House signature cocktails for VIP-marked guests.
- The Lancey Coho when the GM signs off.
- Special occasions when the moment warrants.
When we don't use them
- High-velocity service.
- Anything destined for a busy bar.
- Drinks with garnishes that scratch the inside (rim coatings, sugar rims, large skewers).
Handling
- Hand-wash only. Never run through the dish machine.
- Tumble-polish with a microfiber, no abrasive cloths.
- Hold by the base when carrying.
- Store on the top shelf, never stacked.
Breakage
$60 cost. Log with the MOD. No staff cost unless willful negligence.
