When a glass breaks:
1) Verbally call out 'glass!' so nearby staff and guests are aware.
2) Stop nearby food and drink prep until cleared.
3) Sweep with the dedicated glass broom and dustpan (red-handled, on the wall behind the bar).
4) Wipe the area with a wet towel to catch shards.
5) Log breakage in the breakage log at the host stand. Repeat breaks from the same staff member trigger a coaching conversation with MOD.
