Binchotan and yakitori fuel

equipment #yakitori #charcoal

Binchotan (Japanese white charcoal) is the yakitori grill fuel. Started in a chimney with a small amount of newspaper, then transferred to the grill. Run for ~6 hours per shift. Never extinguish with water (causes cracking and explosive shards). Allow to burn down naturally, then submerge in sand or a sealed canister. Storage: dry, away from moisture. Aki's domain — see role-aki-yakitori-execution.
