Equipment: Ice Machines

Three ice machines, each with a specific purpose.

The three

  1. Hoshizaki 200-lb production, 2-inch cube — premium ice for stirred drinks, Old Fashioneds, and rocks pours.
  2. Cold Draft 1-inch cube — workhorse for shaken cocktails, highballs, and most bar service.
  3. Pebble ice machine — pebble for tiki drinks, Eastsides, juleps, and crushed-ice applications.

Daily protocol

  • Check fill levels morning and mid-shift.
  • Wipe scoops with sanitizer; never leave scoops touching ice.
  • Drain pans on each machine: emptied nightly.

Weekly

  • Sanitize bins inside with food-safe cleaner.
  • Run cleaning cycle on the Hoshizaki and Cold Draft per manufacturer spec.

If a machine fails

Tell the MOD immediately. We carry a 24-hour service contract with the supplier.
