House lime cordial

Use: Gimlet (house version), house Mojitos, custom builds

Ingredients:

  • 20 oz fresh lime juice
  • 12 oz sugar
  • 4 oz lime peels (zest-rich strips)
  • 1 oz kosher salt
  • 0.25 oz citric acid

Method:

  1. Combine sugar, lime peels, salt, citric acid in a container. Muddle and let sit 4 hours (oleo-saccharum extraction).
  2. Add lime juice. Stir until sugar dissolves fully.
  3. Strain through chinois. Bottle, date, refrigerate.
  4. Holds 7 days.

Cost: ~$12 per quart. Yields ~40 cocktail uses at 0.75 oz pour.
