Yield: ~1 quart
Use: Gimlet (house version), house Mojitos, custom builds
Ingredients:
- 20 oz fresh lime juice
- 12 oz sugar
- 4 oz lime peels (zest-rich strips)
- 1 oz kosher salt
- 0.25 oz citric acid
Method:
- Combine sugar, lime peels, salt, citric acid in a container. Muddle and let sit 4 hours (oleo-saccharum extraction).
- Add lime juice. Stir until sugar dissolves fully.
- Strain through chinois. Bottle, date, refrigerate.
- Holds 7 days.
Cost: ~$12 per quart. Yields ~40 cocktail uses at 0.75 oz pour.
