Honey-ginger syrup (Penicillin)

Yield: ~1 quart
Use: Penicillin classic, Penicillin Pill variant

Ingredients:

  • 16 oz raw clover honey
  • 16 oz water
  • 8 oz fresh ginger, peeled and rough-chopped

Method:

  1. Blend ginger and water in a Vitamix until smooth.
  2. Strain through a fine chinois into a saucepan.
  3. Add honey to ginger-water. Warm gently — DO NOT BOIL. Stir until honey integrates fully.
  4. Cool, bottle, date, refrigerate.
  5. Holds 14 days. Smell test before use; if it smells funky, it's gone.

Cost: ~$8 per quart. Yields ~32 cocktail uses at 0.75 oz pour.
