Allergy Grid

⚠ SAFETY-CRITICAL REFERENCE. This grid is a working tool for floor staff. It is not a substitute for verbal kitchen confirmation when a guest declares an allergy. Allergen mistakes can put a guest in the hospital. For any stated allergy:

  1. Confirm verbally with the kitchen lead before sending the order.
  2. Tell the guest you confirmed with the kitchen.
  3. Never guess. Never rely on memory. Never skip the verbal check.

How to read this grid

  • Y = allergen present in the dish as plated by default
  • (blank) = allergen not present in the default preparation
  • ? = not yet confirmed — chef must verify before serving to an allergic guest

Cross-contact and shared-equipment risks

  • Shared fryer. French Fries fry in dedicated oil. Tempura batter contains wheat. Never share fryer oil for a celiac guest.
  • Shrimp butter is brushed on the Chicken Thigh + Green Garlic yakitori at service — shellfish risk on a chicken dish.
  • Stackable butter service on Pullman bread contains dairy regardless of which butter is selected.
  • All raw items share the same prep surface. Trace shellfish exposure is possible on any raw item.

Modifications protocol

When a guest asks "can you make this without X?":

  1. Server confirms with kitchen lead before promising.
  2. Some items can't be modified cleanly. Don't promise what we can't deliver.
  3. Tell the guest exactly what was done: "Made without pancetta. Vinaigrette instead of ranch."

When in doubt

  • Stated allergy → name it to the kitchen, get verbal confirmation, repeat back to the guest.
  • Multiple allergies → escalate to MOD. Don't stack assumptions.
  • New menu items not on this grid → don't serve to an allergic guest until chef confirms.
  • Guest hesitates or describes a restriction vaguely → take it seriously, default to the safer answer.

Pending confirmation from chef

Before staff fully relies on this grid, chef and Aki need to confirm:

  1. Allergens for all 8 yakitori stub items (chicken thigh boneless, tsukune, scallop, gizzard, mushroom, shishito, pork belly, asparagus + pork)
  2. BBQ sauce composition (French Fries side) — soy, mustard, gluten
  3. Pies rotation — current pie + its specific allergens
  4. Octopus + Maitake — confirm whether chili sesame oil base contains soy
  5. Operational sign-off on no-pancetta / no-chorizo / no-bacon modifications
